This activity is a great way to get thinking about Fairtrade and making a delicious sweet treat. Follow the recipe to make these crumbly banana fingers as a yummy treat for yourself and your household or you could share your treats with local friends and family by delivering them snacks to their door! You may need some adult supervision for slicing and using the oven.
Fairtrade
Fairtrade is all to do with fairly trading produce around the world. It is about better prices and working conditions for farmers and workers across the world. The process and support ensures there are fair terms of trade for farmers and workers in the developing world. Fairtrade Fortnight is two weeks around the end of February each year where people come together to celebrate a fairer, more equal future. Fairtrade Fortnight 2021 is between 22nd February and 7th March.
When we see the Fairtrade symbol on produce we know that the farmers and workers who produced and prepared the item have been paid and treated fairly. Have you seen this logo before? What does it remind you of? The logo is a person waving.
Ingredients
175g Co-op unsalted butter, softened, plus extra for greasing
175g caster sugar, plus 15g for dusting (optional)
225g Co-op self raising flour
100g porridge oats
3 Co-op Fairtrade bananas
50g sultanas
What to do
Turn on your oven to 200°C/fan 180°C/Gas 6. Doing this first means it will be hot enough by the time we have prepared our ingredients.
Grease a shallow baking tin (about 30 x 20cm). You can do this either with baking paper or using some butter to make sure our fingers do not stick to the tin.
Weigh out all your ingredients ready to be used.
In a large bowl use a wooden spoon to beat the butter and caster sugar until the mixture is smooth and pale in colour.
Stir in the flour and oats and form into a crumbly and lose dough
Spoon around two thirds of the dough into the base of the tin and level the surface with your wooden spoon
Next slice your fairtrade bananas, mash with a fork and spread onto the dough
Now cover with the remaining dough and sprinkle the sultanas or whichever dried fruit you are using over the top and flatten with your spoon as before
Bake for 20-25 mins or until golden brown
Allow to cool before dusting with the extra caster sugar, if you like
Cut into fingers and carefully remove from the tin
Enjoy your Fair and delicious snack!
